Christina’s “Mango Mama Salad” ••• a summertime favorite !

Happy Saturday, friends! 

I thought I'd share a very easy salad that I'll be whipping up for lunch today. It's a very simple salad that I make a lot during the summer when I want something refreshing.

Since mango is in season, I try and find any excuse to add it to a salad, a smoothie, or to my beloved fish tacos.

I call this one the "Mango Mama Salad" because I have a bit of an obsession with mango. I planted two trees at my abuela's house as a kid and now they give me all the mangos that I will ever need! Are you a fan of mango? If so, try this out! If not, I have substituted the mango with grilled pineapple and it is also delish! 

 

Ingredients: 

mixed greens (your average spring mix)

mango

watermelon

grainless granola ( I like these and these

avocado oil

Himalayan salt

 

Chop up your fruits and toss in a drizzle of avocado oil with a pinch of Himalayan salt

You'll get that sweet, salty, and a delicious crunch from the nuts in the grainless granola !
